Although we are in the midst of summer, England has not failed us in it’s wacky ways and ever unlikely weather forecasts. After a long rainy week with barely a slice of sunshine to warm our skin, I have made this rainy day risotto to warm our bellies instead.

It’s vegetarian, but leave out the blue cheese or substitute it for a non-dairy, cheesy alternative and you have yourself a vegan version!
